I have a 7lb pork tenderloin. I split it down the middle cut hash marks on top poured JimBeam maple brown sugar BBQ sauce that I then added pineapple to.let that smoke at 250 for 2-1/2 hrs. In hickory pellets.
The other half got oven baked with my favorite seasoning called total seasoning. With a binder of yellow mustard.baked at 300 for 1/2hr covered in foil let them both rest for 30 mins. I have sides of what I call sticky sweet potatoes with a buttery brown sugar, I then smoked with the tenderloin, and stewed tomatoes that also got smoked with tenderloin. Hello Janine yes you can use any acidic fruit. I used this because of the pineapples sweeteners and acidic balance. You could leave it out or replace it with a fruit that has the same sweet and acidic properties. Even sugar and lemon.
