A wild animal is best young, but not every time you go out to hunt for the bird do you come back with more than one.
The girls are in the lead as of now, but by the time deer season hits well the boys will pull forward and leave them girls in the dust.
But to the cook that’s me I’m not worried whose wining or not I’m just worried if there’s enough to go around for everyone.
Wild Squirrel, pheasant, frog legs
The little ones they do all the cleaning with the mothers, that’s how they are taught how to live of the land. Here we go I have 15 squirrels, I have 4 pheasants and I got 8 bls of frog legs. yuuuummm yumm yumm sounds like we are going to do some feasting,
I’ve got the smoker set at300 we’ve got all the frog legs only all cleaned up dunked in garlic butter all sitting on the upper deck on a shelf liner.
We have all 4 pheasants all cleaned up with a binder on 2 of Cajun spices and the other 2 are no binder no rub. The main event all of our squirrels, dunked in a binder of honey mustard and rolled in corn meal flour ooo going to get me some of that.
The smokers got cherry and hickory pellets and will be smoking everything at 375 for the first hr. Then back it off to a comfortable 300.
I just added it all up comes to 10 lbs. of frog legs, 15 squirrels at 22lbs and 4 pheasants at 8 bls each, 57 lbs. let them cook for 45hrs at 300 may be see how my frog legs are doing somewhere around the 4-hr. mark. everything came out perfect.
And the kids all got their bellies full and are now getting ready to settle in for the night. I will be making more meals with just squirrel, pheasant and frog legs till almost winter then rabbit and deer.
